  • 6oz. Pero Family Farms English Peas
  • 1 cup orange segments, cut into pieces
  • ½ cup champagne
  • ¼ cup red onion, diced
  • 1 ½ tbsp. fresh mint chopped fine
  • 1 tbsp. olive oil
  • Salt and pepper to taste

Directions
  1. In a large sauté pan pre-heat the olive oil to medium high temperature. Next, add the peas and red onion and cook for 2 minutes.
  2. Add the champagne and cook for 2 more minutes then add the mint, orange pieces, and salt and pepper.
  3. Cook for 1 more minute or until the peas are cooked to your desired texture.
  4. Serve immediately and enjoy!
