- 1 cup quinoa, cooked
- ¼ cup pine nuts, toasted
- 2 tbsp. basil, sliced thin
- 1 tbsp. ricotta cheese
- 1 tbsp. garlic, roasted and chopped
- 1 tbsp. olive oil
- Salt and pepper to taste

- Follow the microwave directions on the butternut squash bag and cook to your desired texture.
- Place the squash in a large mixing bowl and add the quinoa, pine nuts, basil, garlic, olive oil, salt and pepper.
- Mix well and present with the ricotta cheese on top.
