  • 1 cup garbanzo beans
  • 1 cup brown rice, cooked
  • ¾ cup spinach
  • ½ cup red onion, sliced
  • ½ cup avocado, sliced
  • ½ cup mango, diced
  • 1 tbsp. cilantro
  • Salt and pepper to taste

Directions
  1. In a medium serving bowl arrange the spinach on the bottom, rice, Mini Sweet Peppers, garbanzo beans, red onion, avocado, cilantro and mango in the middle.
