- 1 cup Pero Family Farms English Peas
- 1 cup short grain rice
- ½ cup pumpkin, cleaned and diced into small pieces
- ½ cup mushrooms, sliced
- 1 tbsp. olive oil
- ½ tbsp. thyme leaves
- ½ tbsp. garlic, minced
- Salt and pepper to taste

Directions
- Preheat a large sauté pan with olive oil to medium-high temperature.
- Add the mushrooms, pumpkin, peas, and garlic to the pan.
- Cook for two minutes, stirring constantly. Next, add the rice to the pan and mix thoroughly.
- Add ¼ cup of vegetable stock stirring until the stock is absorbed.
- Repeat this step until all the stock is absorbed and the rice is cooked to your desired texture.
