- 6 eggs
- Non-stick cooking spray, as needed
- Salt and pepper to taste
- Fresh Chives, for garnish

- Preheat the oven to 375⁰F
- Spray the sheet pan thoroughly with non-stick cooking spray
- Carefully crack one egg at a time onto the sheet pan, spacing them out evenly.
- Top eggs evenly with Mini Sweet Peppers.
- Season with salt and pepper, to taste.
- Carefully place the sheet pan in the oven and bake for 10 minutes or until the eggs and peppers are cooked to your desired texture. Garnish with fresh chives.
