- 2 cups Pero Family Farms Vegetable Slaw
- 1 ½ cup quinoa, cooked
- ½ cup Pero Family Farms Mini Sweet Peppers, chopped
- ½ cup Pero Family Farms Butternut Squash, cubed
- 2 eggs
- ¾ cup almond flour
- ½ cup black beans, drained
- Salt and pepper, to taste
- 1 cup bread crumbs

- Heat grill to medium temperature.
- In a large mixing bowl, add the vegetable slaw, quinoa, Mini Sweet Peppers, butternut squash, black beans, eggs, flour, bread crumbs, salt and pepper.
- Mix well.
- Next, form ½” thick patties.
- Lightly brush the patties with olive oil and place onto grill.
- Cook for 3 minutes on each side.
