- 6 large shrimp, cooked
- 2 cups vegetable oil
- 1 cup flour
- ¾ cup water (cold)
- ½ cup seltzer water (cold)
- 1 egg
- 1 tsp. baking powder

- In a small bowl, combine all of the wet ingredients.
- In another small bowl, combine all of the dry ingredients.
- Next, in a medium bowl, combine the wet and dry ingredients together and mix lightly, being careful not to overmix.
- Heat oil in a large pot to 375° F.
- Dip each vegetable into the batter, separately.
- Fry each piece individually until it starts floating to avoid them sticking together.
