- ½ cup grape tomatoes, halved
- ½ cup corn
- ½ cup red onion, thinly sliced
- ½ cup avocado, diced
- 1 tbsp. olive oil
- ½ tbsp. lemon juice
- Salt and pepper, to taste

Directions
- Preheat oven to 400⁰F.
- Place the Green Beans on a baking tray and drizzle evenly with 1 tbsp. olive oil.
- Season with salt and pepper, to taste.
- Place tray in oven and roast for 15 minutes or until the Green Beans reach your desired texture.
- In a large mixing bowl, add the roasted Green Beans, tomatoes, corn, onion, avocado, and lemon juice.
- Mix well and serve!
