What You Need

Ingredients
  • ½ cup bacon, cooked, crumbled
  • ½ cup water
  • ¼ cup sugar
  • ¼ cup white vinegar
  • ¼ cup water
  • 1tbsp. cornstarch
  • 12oz. Pero Family Farms Green Beans, blanched
  • 8oz. Mini Sweet Peppers cut into rings
  • 2 cups baby spinach
  • 2 cups baby arugula
  • 1/2 cup red onion, thinly sliced
  • 1/2 cup blue cheese crumbles
  • Salt and pepper to taste

Lets Get Started

Directions
  1. In a medium bowl whisk together the water, sugar, vinegar and corn starch, whisking constantly.
  2. In a medium pan add the crumbled bacon and pour the vinegar mixture over it.
  3. Cook over medium high heat, stirring constantly until mixture thickens.
  4. Slice the Mini Sweet Peppers into rings
  5. Add all ingredients to a large bowl.
  6. Mix well.
  7. Drizzle with Warm Bacon Dressing.
  8. Mix well and serve.
