- 1 cup Pero Family Farms Mini Sweet Peppers, cut into rings
- 1 cup couscous, cooked, chilled
- ½ cup radicchio, sliced thin
- 2 tbsp. parsley, chopped
- 1 tbsp. lemon zest,
- 1 tbsp lemon juice
- 1 tbsp. olive oil
- 1 tsp. minced garlic
- Salt and pepper to taste
