- 1 cup Pero Family Farms Mini Sweet Pepper Rings
- 3 eggs
- 1 up small red potatoes, halved
- ½ cup red onions, thinly sliced
- ½ cup black beans, drained
- ½ cup queso fresco, crumbled
- ¼ cup cilantro leaves, chopped
- 1 tbsp. olive oil
- ½ tbsp. smoked paprika
- Salt and pepper, to taste

- Preheat the oven to 350°F.
- In a large pan, heat the olive oil to medium-high temperature.
- Next add the onions, peppers, and potatoes to the pan.
- Cook for 2 minutes.
- Next, add the broccoli and black beans to the pan.
- Cook for 1 minute, stirring occasionally.
- Add the smoked paprika and season with salt and pepper, stirring to combine.
- Transfer the vegetable mixture equally to 3 individual skillets.
- Next, gently add 1 egg to each skillet.
- Place in a preheated oven at 350° F for 10 minutes or until the eggs are cooked to
your desired texture. - Top with cheese and cilantro before serving.
