- 3 eggs
- 2 cups Pero Family Farms Broccoli Florets, blanched
- 1 cup Pero Family Farms Mini Sweet Pepper Rings
- ½ cup cheddar cheese, shredded
- ½ cup spinach, cut into thin strips
- ½ cup milk
- ¼ cup bacon, cooked and chopped
- Salt and pepper, to taste

Directions
- Preheat the oven to 350⁰F.
- Coat the inside of a muffin pan with non-stick spray.
- In a large mixing bowl, crack the eggs and whip in the milk, salt, and pepper.
- Next, add the Broccoli, Mini Sweet Peppers, cheese, and bacon evenly to each muffin section.
- Carefully pour or spoon the egg mixture evenly into each section, covering the vegetables.
- Bake for 12 minutes or until a toothpick inserted in the center of the muffin comes out dry.
