- 8oz. Pero Family Farms Mini Sweet Peppers, cut into thin strips
- 2 tbsp. basil pesto
- 2 eggs
- 2 pieces of toast
- Salt and pepper, to taste
- 1 tbsp. parmesan cheese, grated (optional)
- Basil leaves, for garnish

Directions
- In a large sauté pan, heat olive oil to medium-high temperature.
- Add the Mini Sweet Peppers and cook for 1 minute.
- Add the pesto to the pan and mix well.
- Next, gently add the eggs on top of the peppers and pesto.
- Cook eggs to your desired texture.
- Place eggs and peppers over toast.
- Garnish with Parmesan cheese and basil to serve.
