- 1 bag Pero Family Farms Mini Sweet Pepper Rings
- 1 TBLS Olive oil
- 1 can low or no sodium Kidney Beans, rinsed and drained
- 1 can low or no sodium Northern Beans, rinsed and drained
- ½ cup Yellow Onion, minced
- 1 Garlic Clove, minced
- 1.25 cup Vegetable Broth
- 2 tsp Chili Powder
- 2 tsp Ground Cumin
- 1 tsp Sea Salt
- A few pinches Black Pepper
- Fresh cilantro for garnish (optional)

Directions
- In a dutch oven or soup pan heat olive oil over medium heat. Once hot add onions and garlic. Let this cook for 1-2 minutes, stirring occasionally.
- Add the rinsed and drained beans to the pot and the chili and cumin powder. Stir and let this cook for 3-4 minutes on medium heat.
- Add the Pero Family Farms Mini Sweet Pepper Rings, season the chili with salt and pepper, and pour in the vegetable stock. Bring this to a light boil. Once the vegetarian chili is at a boil cover the pot and reduce the pot to low heat. Let the chili cook for 12-15 minutes.
- Serve immediately and garnish with fresh cilantro.
