- 2 cups Pero Family Farms Mini Sweet Peppers, cut into rings
- 1 cup vegetable stock
- 1 cup Pero Family Farms Brussels Sprouts, quartered
- 1 cup bread, cut into cubes
- ½ cup Candied pecans
- ¼ cup dried cranberries
- 1 tbsp. fresh thyme
- Salt and pepper to taste

Directions
- Preheat the oven to 350⁰F. Place pepper rings, brussels sprouts, bread, pecans, cranberries, thyme, slat and pepper in a large casserole dish and mix well.
- Bring the vegetable stock to a boil and pour over the top of the stuffing mixture.
- Place in the over uncovered for 30 minutes or until the vegetables are cooked to your desired texture.
