- 8oz. Pero Family Farms Sugar Snap Peas
- 2 cups baby arugula
- 1 cup beet spirals
- ½ cup sweet potato cubes, roasted
- ½ cup walnut pieces
- ½ cup walnut beet vinaigrette
- ¼ cup red onion, sliced thin
Walnut Beet Vinaigrette
- ¼ cup walnuts
- ¼ cup beet spirals
- 1 tbsp. red wine vinegar
- 1 tbsp. olive oil
- 1 tbsp. water
- ½ tbsp. honey
- Salt and pepper

Directions
- On a large serving plate place the arugula down first then top with peas, beets, sweet potatoes, red onion, and walnuts.
- Lightly drizzle the vinaigrette over the top and serve.
WALNUT BEET VINAIGRETTE
- In a blender add walnuts, beets, vinegar, honey, water, salt and pepper- pulse until smooth.
- Next slowly add the olive oil – serve chilled if possible.
