What You Need

Ingredients
  • 8oz. Pero Family Farms Sugar Snap Peas
  • 2 cups baby arugula
  • 1 cup beet spirals
  • ½ cup sweet potato cubes, roasted
  • ½ cup walnut pieces
  • ½ cup walnut beet vinaigrette
  • ¼ cup red onion, sliced thin

Walnut Beet Vinaigrette

  • ¼ cup walnuts
  • ¼ cup beet spirals
  • 1 tbsp. red wine vinegar
  • 1 tbsp. olive oil
  • 1 tbsp. water
  • ½ tbsp. honey
  • Salt and pepper

Directions
  1. On a large serving plate place the arugula down first then top with peas, beets, sweet potatoes, red onion, and walnuts.
  2. Lightly drizzle the vinaigrette over the top and serve.

WALNUT BEET VINAIGRETTE

  1. In a blender add walnuts, beets, vinegar, honey, water, salt and pepper- pulse until smooth.
  2. Next slowly add the olive oil – serve chilled if possible.
