Southwest Broccoli Salad
- 8oz. Pero Family Farms Organic Broccoli Florets
- 8 grape tomatoes, halved
- ½ cup corn
- ½ cup black beans
- ¼ red onion, sliced thin
Chili Lime Dressing
- ½ cup lime juice
- ¼ cup honey
- 1 tbsp. rice wine vinegar
- 1 tbsp. vegetable oil
- ½ tbsp. chili powder
- Salt and pepper to taste

Directions
Southwest Broccoli Salad
- Cook the Broccoli to desired texture using microwave directions.
- In a large bowl add the cooked broccoli, grape tomatoes, corn, black beans and red onions.
- Pour the Chili Lime dressing over the top and mix well before serving.
Chili Lime Dressing
- In a small mixing bowl add the lime juice, honey, vinegar and chili powder and mix well.
- Continue mixing and slowly add the vegetable oil.
- Add salt and pepper to taste
