- 1 bag Pero Family Farms Mini Sweet Peppers, cut into small pieces
- ½ cup Garbanzo Beans, rinsed and drained
- ½ cup Pero Family Farms Cucumbers, peeled, and diced
- ¼ cup Flat Leaf Parsley, minced
- 2 TBLS Fresh Mint, minced
- 2 TBLS Scallions, minced
- 2 TBLS Extra Virgin Olive Oil
- 1 TBLS Lemon Juice
- ¼ tsp Sea Salt
- A pinch of Black Pepper

Directions
- Remove the tops and de-seed the mini sweet peppers. Cut into small pieces and place in a bowl.
- Peel and cut the cucumber.
- Rinse and drain well the garbanzo beans and add into the bowl with the vegetables.
- Mince well the flat leaf parsley, scallions, and mint. Add the herbs into the bowl. Now add the extra virgin olive oil and lemon juice. Season with salt and pepper and gently toss the balela salad together.
