12oz. Pero Family Farms Organic Green Beans
1 ½ cups garbanzo beans, drained
¾ cup red onions, pickled (see recipe)
2 tbsp. Italian parsley, chopped
1 tbsp. olive oil
½ tbsp. Balsamic vinegar
Salt and pepper, to taste

Directions

•Blanch the green beans.
•Add the blanched green beans to a large mixing bowl.
•Add the garbanzo beans, pickled onions, parsley, balsamic vinegar, and olive oil to the green beans.
• Season to taste, with salt and pepper.
• Mix well

Pickled Red Onions
¾ red onion, thinly sliced
½ cup white vinegar
1/3 cup sugar
¼ cup water
Salt and pepper, to taste

• In a small pot, add the vinegar, sugar, and water and bring to a boil over medium heat.
• Turn off the heat and add the onions.
• Season with salt and pepper.
• Stir for one minute.
• Drain and serve or store in the refrigerator for up to 2 weeks
